Eco-friendly cocktails again

Even these old favourite cocktails can be green as well as delicious...ideal to serve at a smaller wedding reception or any similar celebration...

Eco-Friendly Tom Collins
2 ½ parts organic gin
1 part fresh fairtrade lemon juice
1/6 part white sugar dissolved in a little water
Sparkling natural British (or otherwise local, if you're not in Britain) spring water
Place first three ingredients in glass or jug and top up with the sparkling water.

Eco Daiquiri
2 ½ parts organic white rum
1 part fresh fairtrade lime juice
1/6 part white sugar dissolved in a little water
Shake all ingredients together with some ice, and strain into appropriate glasses.

Eco Frozen Daiquiri Deluxe
As above, but put all ingredients in a blender along with the ice and add some soft fruit like fairtrade banana or locally-sourced organic berries. Yum…
